Q: what is the molecular weight and degree of esterification?

According to our raw material supplier, this is not assayed for degree of esterification as it is not a modified citrus pectin. It is a standard complex from grapefruit. The average molecular weight of this natural citrus pectin would typically be around 100,000.

Q: This is not a "modified" citrus pectin. Does that type, i.e. the "modified", provide greater health benefits?

Have used it for years.......smallteaspoon in chosen liquid. Health journals recommend.

Q: What does it REALLY taste like? Reviews not helpful. Im OK with bitter grapefruit taste (like discontinued NOW product) but not vomit.

Hi,It taste bitter, but kind of bland no actually real taste . I mix it with Orange Juice so it has at least a little flavor. Do not take it try, it will clump up in your throat. It does not dissolve either rather form little balls in liquid, but its easier to consume this way. When you want to put it in water with a spoon do not submerge the stuff with the spoon, rather drissel it in the liquid, otherwise it will stick to the spoon.Hope it was helpful. :)

Q: The label says this consists of pectin, no added sugar, etc. if this is only pectin powder, then why does the label also say "yields 37% pectin"?

On the back label, it actually says Grapefruit Pectin Complex (meaning more than just the Pectin). My guess would be that the parts that they use to get the pectin, only end up yielding 37% pectin.
